Easy to make Paleo friendly breakfast bars.

Ingredients
- ½ cup melted coconut oil (organic, unrefined, cold pressed - I like Kirkland's brand)
- ½ cup raw honey
- 1 tsp. vanilla
- 2½ cups blanched almond flour (I like Honeyville)
- ½ tsp. sea salt
- ½ tsp. baking soda
- 1 cup unsweetened shredded coconut (I like Bob's Red Mill)
- 1 cup raw pumpkin seeds
- 1 cup raw sunflower seeds
- ½ cup raw slivered almonds
- ½ cup raisins (I have also used dried cranberries, blueberries, or goji berries)
Instructions
- Preheat oven to 350°
- In a large bowl, combine coconut oil, honey and vanilla.
- Mix in almond flour, salt and baking soda.
- Add coconut, pumpkin seeds, sunflower seeds, almond slivers and raisins.
- Stir until well combined.
- Grease a 9 x 13 baking dish with coconut oil.
- Wet your hands and pres the dough evenly into the baking dish.
- Bake 20 minutes at 350°.
- Let bars cool in pan for 2 hours before cutting into bars.
- Refrigerate bars to keep them solid.
